Proof in the pudding....

Here is photographic evidence of how delectable and delicious Friday's cooking frenzy turned out to be!

    Fusion Beef.
    I used a large piece of lean blade beef roast and rubbed crushed coriander seeds and garlic over the top of it, then ground some black pepper over the top. Over that I poured 1/4 cup balsamic vinegar, 1/4 cup water and a good spoonful of honey ( mixed together) then let it cook for 8 hours on low.

    I removed the beef and used two forks to pull it into shreds. I thickeded the sauce a little with cornflower-then put the beef back in.


    Sourdough Banana & Streusel Bread

    Banana Coffee Cake:
    3 large over-ripe bananas
    ½ cup (125g) unsalted butter, melted
    3 large eggs
    ¼ cup sour cream or Greek yogurt
    1 cup sourdough starter
    1 teaspoon vanilla extract
    2 cups all-purpose flour
    1 cup granulated sugar
    1 ½ teaspoons baking powder
    ½ teaspoon baking soda
    ½ teaspoon salt

    To make the coffee cake, mash the bananas in a large mixing bowl. Whisk in the melted butter until completely incorporated. Add the eggs and whisk them in until fully incorporated. Add the sour cream and whisk until well combined, then whisk in the starter and vanilla until combined. Add the remaining ingredients and beat until well mixed.

    Place in well greased & lined large tin ( the one I used was about 25 x 30cm)

    Then top with

    Stuesel Topping

    ¼ cup brown sugar
    ¼ cup granulated sugar
    1 teaspoon vanilla extract
    1 ½ teaspoons cinnamon
    1 ½ teaspoons cardamom
    1 teaspoon mixed spice
    Pinch of salt
    ¾ cup toasted peanuts finely chopped
    ½ (125g ) cup unsalted butter, melted
    1 cup all-purpose flour

    Mix all ingredients except butter & flour together. Then pour over butter,mix well, Stir in flour and mix again.

    Crumble over cake batter and cook at 170c for around 40 -45 mins until cooked in middle. If streusel is browning too quickly cover loosely with foil.
